Ingredients:
1 egg, beaten
1 cup of milk
1 cup of flour
1/3 cup of sugar
3/4 cup of cornmeal
3/4 teaspoon of salt
5 teaspoons of baking powder
2 tablespoons vegetable oil
Directions:
Preheat the oven to 350 F. Mix all of
the dry ingredients together. Add egg,
milk and oil to dry mixture and blend
well.
Pour into 8 inch square pan. Bake for
30 to 35 minutes until slightly brown
on top. Serve hot or cold with butter,
honey or preserves. Yum







Hi,
I was recently in Nassau after many years. I was reminded of Benney Cake. I’m trying to find a recipe for it.
As a child I ate benny cake, guava duff, coconut candies, pea n rice, and so many other wonderful foods.
I brought home some guava jam (which I love).
