Africa: Pinto Beans With Potatoes (Rwanda)

2 Cups Dried Pinto Beans — soaked
3 Large Cassava
Or Potatoes — chopped
3 Stalks Celery — chopped
1 Medium Onion — thinly sliced
4 Tablespoons Peanut Oil
1 Teaspoon Salt
Directions cover beans with water and bring to boil. simmer until tender. Add potato or cassava, celery or salt and more if necessary to cover. simmer over low heat. just before potatoes are tender, fry onion in oil using a slotted spoon add beans and potatoes to onion and fry until warm. serve over rice.
