1 Medium Onion — finely chopped
2 Medium Red Bell Pepper — finely chopped
4 Large Tomatoes — sliced
1 Cup Blackeyed Peas — cooked
2 Cups Corn
1 Teaspoon Paprika
1 Tablespoon Olive Oil
Salt And Pepper — to taste
Directions Saute onion in oil until well browned, add peppers and saute until limp. Add tomatoes and simmer for 5 minutes. Meanwhile combine beans, corn and salt. Add to onions and season with pepper. Mix well, cover and simmer for 15 minutes. Add water if necessary. Serve over rice.
