Ingredients

* 1 Tablespoon Olive Oil
* 1 Medium Onion — finely chopped
* 1 Cup Lentils
* 1 Cup Water
* 1/4 Teaspoon Pepper
* 1/4 Teaspoon Cumin
* 2 Cups Water
* 2 Cups Raw Rice
* 1/2 Teaspoon Salt

Directions Heat oil in pan, add onion and fry for 3 minutes. Add lentils, water, pepper and cumin. Bring to a boil and simmer for 5 minutes. Add 2 cups water and bring to a boil. Add rice and salt and continue to boil. Then reduce heat to low, cover the pan, simmer for 15 minutes. Remove from heat and let sit for 10 minutes. Serve.
