Ingredients
* 1 Pound Chicken Breasts — diced
* Salt And White Pepper — to taste
* 1 Tablespoon Olive Oil
* 4 Cups Chicken Stock
* 3 Large Onions — chopped
* 4 Cloves Garlic — minced
* 3 Medium Serrano Pepper — diced
* 4 Large Tomatoes — chopped
* 3 Tablespoons Tomato Paste
* 1 Cup Vegetables — (see note)
* 2 Cups Rice — cooked
* 1/2 Teaspoon Cilantro
Directions 1. Saute onions, garlic & peppers in oil.
2. Add chicken, spices, tomatoes, paste, vegetables & some stock.
3. Boilng to boil, simmer for 25 minutes.
4. Prepare rice using stock instead of water.
5. Stir together & serve.
