Ingredients
* 1 Large Onion — Chopped
* 1 Medium Bell Pepper — Chopped
* 1 Teaspoon Curry Powder
* 1 Teaspoon Salt
* 1 Teaspoon Pepper
* 3 Tablespoons Olive Oil
* 1 Can Tomatoes — Chopped
* 3 Cups Kidney Beans
* 2 Cups Coconut Milk
* 3 Cups Water
* 1 Cup Rice — Cooked
Directions Saute onion, peppers, curry powder, salt, and pepper in oil for 5 minutes. Add tomatoes and simmer for 10 minutes. Add beans, coconut milk, and water. Simmer for 5 minutes. Add rice, stir well and serve.
